

Sweet Onion and Fresh Chive Bread
This bread is best served right out the oven. Serves 12.
Ingredients
¾ cup chopped sweet onion
1 ½ cups flour
¼ cup chopped fresh chives
2 T sugar
2 tsp. baking powder
½ tsp. salt
¼ tsp. baking soda
1 egg slightly beaten
¼ cup oil
1 cup buttermilk
Pre-heat the oven to 375 degrees. Lightly grease an 8 - 9 inch bread pan.
Combine flour, chives, sugar, baking powder, salt, and baking soda in a large bowl and set aside.
Sauté onion in small skillet coated with nonstick spray until crisp. Combine cooked onions, egg, oil, buttermilk, in a small bowl and mix well. Blend both mixtures together thoroughly and pour into the greased pan.
Bake at 375 degrees for about 17 to 22 minutes or until a toothpick inserted into center comes out clean. Serve warm.
