Grandmother's Banana Bread

When the bananas get too ripe for eating, freeze them and use for this great bread recipe. Serves 10.

Ingredients

3 bananas, very ripe

2 cup flour, sifted twice

2 eggs, separated and beaten

1 cup sugar

1 cup chopped walnuts

3 T. melted butter

1 tsp. baking soda

½ tsp. salt

½ tsp. vanilla

Preheat oven to 350 degrees. Mash bananas then add sugar, butter, and beaten egg yolks. Blend thoroughly. Stir in dry ingredients. Add vanilla and nuts, and continue beating until batter is smooth. Fold in beaten egg whites. Pour into loaf pan. Bake at 350 degrees for 1 hour.
