Nancy's Zucchini Casserole

A great use for zucchini from the garden and guaranteed to be a family favorite. Serves 8.

Ingredients

2 large zucchini cut into ¼ inch slices

2 large onions, peeled and sliced

1 can tomato soup

3 slices lean bacon, cooked and finely chopped

¼ cup cheddar cheese, fat-free or low-fat

Heat oven to 350 degrees. Coat a medium casserole dish with non-stick spray. Alternate layers of the zucchini slices and onions, top with chopped bacon. Pour soup on top, cover and bake for 40 minutes. Stir once after dish has baked for 20 minutes. Top with cheese and bake uncovered for 15 minutes or until cheese is melted.
