Ingredients
1 cup cooked brown rice
1 cup cooked lentils
1 medium tomato, diced
1/3 cup thinly sliced green onion
1 tablespoon of parsley
1 tablespoon red wine vinegar
1/2 tablespoon olive oil
1 garlic clove minced
Preparation
Combine brown rice, lentils, tomato, onion and parsley. In a small bowl combine the remaining ingredients. Toss to coat. Cover and refrigerate for at least 1 hour.
